I posted a picture of this one on my instagram, thinking that people would appreciate it for the good, honest food that it is... I wasn't prepared for all the recipe requests! This one is so easy to make that I feel like a bit of a fraud even sharing the recipe. This is a great meal to have up your sleeve, because it makes a great breakfast (with poachies, avo and spinach), lunch (with tuna and salad, or dinner (with lamb shanks or bangers and greens).

To me, this is proper 'Suzy Homemaker'/1970's Australian housewife stuff. Good, honest, nothing fancy, 'stick it in the oven and let it to its thing' kind of food... that everyone just so happens to love! It's also perfect lunch box, work lunch, or picnic food. We had a few friends pop over for an impromptu brunch on the weekend, and I whipped-up this incredibly delicious, veggie-filled zucchini and bacon slice. We all loved it. The neighbours asked what I'd been cooking because it smelled amazing. And then everyone wanted the recipe. To be honest, I was not expecting such a response, otherwise I'd have attempted to take a better photo ;-)
Juicy chicken shish kebabs drizzled in lemon yoghurt dressing served with sweet potato wedges and salad... Simple, satisfying, and tummy-friendly without any weird adjustments!
These also happen to be DAIRY FREE, EGG FREE, NUT FREE and SOY FREE. Winning! Missing out on Chinese food favourites is a big blow for many people on a low-FODMAP diet. This recipe is adapted from a few of my healthy Asian food and Low-FODMAP food bloggers.
